Spring desserts are all about freshness, lightness, and often surprising speed in preparation. The season’s stars, especially strawberries and berries, bring natural sweetness and a hint of tartness that make these treats truly refreshing.

Here are five such recipes: simple, stunning, and easy to make without complicated techniques, yet bursting with freshness that will impress everyone. It’s like tasting the first warm rays of sunshine!

Lemon Cream with Forest Berries

Ingredients:

  • 200 g silken tofu
  • 3 tablespoons honey
  • Juice and grated zest of 1 lemon
  • A handful of fresh or frozen forest berries

Preparation:

Blend the tofu, honey, and lemon juice until smooth. Stir in the lemon zest, then spoon into glasses. Top with fresh berries. Ready to enjoy immediately, no chilling needed – one of the quickest spring desserts that’s still creamy and fresh.

Strawberry Cobbler (Quick Fruit Bake)

Ingredients:

  • 400 g strawberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 100 g flour
  • 50 g butter
  • 1 egg
  • 100 ml milk

Preparation:

Halve the strawberries and mix with sugar and lemon juice, then place in a baking dish. Quickly mix the remaining ingredients into a batter and spoon it over the strawberries. Bake at 180°C (350°F) for about 25 minutes until golden brown. Best served warm, especially with a scoop of ice cream.

Coconut Water Granita with Strawberries

Ingredients:

  • 500 ml coconut water
  • 2 tablespoons sugar
  • A handful of strawberries
  • 1 tablespoon toasted coconut chips

Preparation:

Mix the coconut water with sugar, pour into a shallow dish, and freeze. Every 30 minutes, stir with a fork to create icy crystals. Serve topped with fresh strawberries and toasted coconut. A light, refreshing dessert that’s part drink, slush, and ice cream.

Mini Lemon Tarts (Quick Tartlets)

Ingredients:

  • 12 ready-made mini puff pastry shells
  • 1 jar lemon curd
  • A handful of fresh berries
  • Powdered sugar (optional)

Preparation:

Warm the tart shells briefly in the oven. Fill with lemon curd and top with fresh berries. Dust with powdered sugar if you like. The whole process takes just 20 minutes, yet you get an elegant dessert.

Chilled Strawberry Pie

Ingredients:

  • 250 g crushed biscuits
  • 100 g melted butter
  • 500 g strawberries
  • 300 ml cream
  • 2 tablespoons sugar
