This apple pumpkin bar uses simple ingredients you can find easily. When pumpkins are in season, fresh pumpkin puree is perfect to add. You’ll also need unsweetened applesauce, which you can make at home from fresh apples. The recipe is straightforward, so even kitchen beginners can dive in. Once you smell it baking, you’ll know it was worth the effort. 

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 eggs 
  • 2/3 cup cane sugar
  • 2/3 cup brown sugar
  • 1 container (about 15 oz) pumpkin puree
  • 1 cup unsweetened applesauce

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Gather all your ingredients.
  3. In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In another bowl, beat the eggs, sugars, pumpkin puree, and applesauce until smooth.
  4. Gradually add the dry ingredients to the wet, stirring until combined into a batter.
  5. Pour the batter into a greased or parchment-lined pan and bake for about 25-30 minutes. 
  6. Check doneness with a toothpick. When it comes out clean, remove the pan from the oven.
  7. Let the bars cool completely in the pan, then slice carefully and enjoy.

Extra tips: For a special twist, add chopped walnuts, hazelnuts, cashews, or almonds, plus dark chocolate chips. If you’re watching your sugar intake, feel free to swap in sweeteners of your choice.
