  • Almond flour or gluten-free oat flour: 100 g (about 3.5 oz)
  • Baking powder: 5 g (1 teaspoon)
  • Pinch of salt
  • Eggs: 3 (about 150 g total / 5 oz)
  • Roasted sweet potato puree: 150 g (about 5 oz)
  • Erythritol: 80 g (about 3 oz)
  • Vanilla extract: 5 ml (1 teaspoon)
  • Grated lemon zest: from 1 lemon

Preparation

  1. Preheat your oven to 180 °C (350 °F). Prepare a 20 cm (8-inch) cake pan by greasing it with butter or coconut oil and lining it with parchment paper.
  2. In a large bowl, mix the ground poppy seeds, almond flour, baking powder, and salt.
  3. In another bowl, lightly beat the eggs, then add the sweet potato puree, erythritol, vanilla extract, and grated lemon zest.
  4. Pour the wet ingredients into the dry and stir until you get a smooth, uniform batter.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10–15 minutes, then carefully turn it out onto a wire rack to cool completely.

For an extra touch, drizzle melted high-cocoa dark chocolate on top, sprinkle with almonds, or spread with sugar-free jam.

Tips and Tricks

You can easily mix up this poppy seed cake to keep it exciting. Adding fruits like blueberries or raspberries creates a lovely contrast with the nutty poppy flavor and adds a pop of color.

If you want a stronger poppy flavor, try adding extra grated lemon zest or vanilla extract to boost the taste and make your cake even more special.
