Ingredients:

  • Ice cream
  • A pack of cookies (any kind will do)
  • Chocolate shavings, chopped dried fruit, or tiny candies

How to make it:

  • Line a baking tray with parchment paper and scoop the ice cream onto it. Work quickly to prevent melting! Spread it evenly about a few centimeters (around 1 inch) thick. Cover with another sheet of parchment and freeze for a few hours until solid.
  • You’ll need a cookie cutter—since cookies are round, a round cutter works best. Pick one about the same size as your cookies, or slightly smaller or larger.
  • Remove the top parchment from the ice cream and use the cutter to punch out vanilla ice cream rounds. Support from underneath with your hand, and dip the cutter in hot water before each cut to speed things up.
  • Assemble your dessert: sandwich the vanilla ice cream between two cookies, then roll the edges in your choice of finely chopped crunchy toppings.

Chocolate-Stracciatella Layered Ice Cream

This recipe is just as simple, and although you’ll need to use the oven briefly, the delicious result is totally worth it. Let’s quickly see how to make this divine layered ice cream dessert!

Ingredients:

  • One serving of chocolate ice cream
  • One serving of stracciatella ice cream
  • One sheet of puff pastry
  • A bar of high-cocoa dark chocolate

How to make it:

  • Boil water in a pot and melt the chocolate over steam. Add a drop or two of rum or some grated orange zest if you like.
  • Meanwhile, roll out the puff pastry thinly and bake it for a minute or two. Tip: buy puff pastry that comes in multiple thin sheets to save time.
  • Once baked, spread the melted chocolate over the pastry and let it cool completely.
  • Now assemble: place small scoops (a regular tablespoon works great) of stracciatella ice cream on the chocolate pastry, then add another pastry layer, followed by chocolate ice cream. Done!

Tip: This dessert is endlessly customizable—use any ice cream you love and add whipped cream or fruit for extra flavor.

Lemon-Raspberry Molded Ice Cream

Finally, here’s a dessert that requires a bit more kitchen time—but still just minimal prep. If you love homemade treats, you can also try the earlier recipes with your own baked cookies and homemade ice cream.

Ingredients:

  • 10 ladyfinger biscuits
  • 130 grams (about 4.5 oz) raspberries
  • 2 tablespoons sugar
  • 240 ml lemon curd
  • 480 ml heavy cream

How to make it:

  • Line a loaf pan or silicone mold with cling film.
  • Mix raspberries with sugar and blend thoroughly. Press the mixture through a sieve to keep only the smooth, sweet puree.
  • Whip the cream, then fold in the lemon curd. Pour about one-third of this mixture into the mold.
  • Dip ladyfingers in the raspberry syrup and layer them lengthwise over the cream.
  • Top with the remaining cream.
  • Cover the dessert with cling film and freeze. Once fully set, slice with a hot knife to serve.
