Raw is healthier, right? Not always. While the "more natural, the better" trend keeps growing, some very common foods can be genuinely dangerous when eaten without cooking. They may look completely harmless — but the risks are real. Here's what you should always cook before eating.

Potatoes

Potatoes are one of the most widely eaten foods in the world, but eating them raw is a bad idea. Raw potatoes contain solanine, a naturally occurring toxic compound that can cause headaches, nausea, and vomiting — and in large amounts, it can be life-threatening.

The risk is especially high with older, green-tinged, or sprouting potatoes, which contain significantly higher levels of solanine. Always cook your potatoes thoroughly — boiling or baking breaks down the toxin and makes them safe to eat.

The hidden danger in beans

Most people assume beans are healthy in any form. But raw beans — especially kidney beans — contain a protein called phytohaemagglutinin, which is toxic to the human body. Even a small amount of raw or undercooked beans can cause intense nausea, vomiting, and diarrhea.

The fix is simple: always soak dried beans before cooking, then boil them thoroughly. This neutralizes the harmful compound and makes them perfectly safe to enjoy.

Chicken liver: delicious or dangerous?

Chicken liver can be a wonderfully rich and nutritious dish — but only when properly cooked. Raw or undercooked liver can harbor bacteria and parasites that are invisible to the naked eye but capable of causing severe food poisoning.

High heat kills these pathogens, so always make sure chicken liver is cooked all the way through before eating. There's no safe way to enjoy it raw.

Mushrooms — the risk most people overlook

Some mushroom varieties are fine to eat raw, but many contain natural toxins that can be harmful when uncooked. Wild mushrooms in particular can be deadly if eaten raw — and even some that look edible are not.

Even store-bought, cultivated mushrooms are best cooked. Heat destroys potentially harmful compounds, improves digestibility, and honestly makes them taste far better too.

The bottom line: when in doubt, cook it. Proper preparation isn't just about taste — it's what keeps you safe. A few extra minutes in the kitchen can make all the difference for your health.
