One standout is a tasty, quick pasta you can whip up in about 20 minutes: a simple yet amazing vegan lentil bolognese with mushrooms and red lentils. Want to try it? Here’s what you’ll need and how to make it!

Vegan bolognese pasta recipe

Ingredients for 4-6 Servings:

  • 1 tablespoon olive oil
  • ½ yellow onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • 3 tablespoons nutritional yeast (adds a special cheesy flavor)
  • ½ teaspoon sea salt
  • 1 tablespoon balsamic vinegar
  • 2 tomatoes, diced
  • 1 cup white button mushrooms, chopped
  • ½ cup dry red lentils (rinsed)
  • 1 cup vegetable broth
  • 2 cups pasta sauce
  • Vegan parmesan (for topping)
  • Pasta of your choice

Preparation:

  1. Heat olive oil in a pot, add onion and garlic, and sauté over medium heat until softened (about two minutes).
  2. Add oregano, nutritional yeast, and salt, and cook for another minute until fragrant.
  3. Stir in mushrooms and diced tomatoes. Let cook for about 2 more minutes. Then add red lentils, vegetable broth, and pasta sauce.
  4. Bring the sauce to a boil, then simmer over medium heat for about 20 minutes until the lentils are tender. Cook the pasta according to package instructions, then combine with the sauce and serve topped with vegan parmesan to taste.
