Coffee grounds contain several nutrients that make them a popular soil enhancer, including nitrogen, potassium, magnesium, and copper. Brewed coffee, while less nutrient-dense, still holds some of these elements. So, what do these nutrients do?

Nitrogen: A vital macronutrient for plant growth, essential for synthesizing proteins and other key plant compounds.

Potassium: Crucial for overall plant health, involved in photosynthesis, nutrient uptake, and water regulation.

Magnesium: A main component of chlorophyll, supporting photosynthesis.

Copper: Needed in smaller amounts, it plays a role in enzymatic functions and protein synthesis.

Adding ground or brewed coffee to your soil can boost essential nutrients, though studies show this increase is often minimal. What coffee really offers is a carbon source for soil microbes. While you might not see brighter blooms or tastier tomatoes this season, over time, the "microbial glue" left by bacteria and fungi can improve soil structure, reduce erosion, and help retain nutrients.

Research also suggests coffee is an effective snail repellent, outperforming some traditional metaldehyde-based products. A study from Oregon State University’s extension service found that a mix of one part water to two parts coffee was strong enough to repel 100% of the snails tested from treated soil.

At low concentrations, coffee likely won’t harm your garden. But it shouldn’t replace fertilizer: experts say coffee grounds are best as a supplement to a well-rounded fertilizing plan. Alone, they lack key nutrients like phosphorus and calcium that plants also need. Regularly pouring coffee grounds at your plants’ base can bring other risks over time:

Increased soil acidity: Traditional gardening wisdom says coffee lowers soil pH. While often temporary, higher acidity can cause problems for plants that thrive in neutral or alkaline soil.

Dry soil: If not mixed properly, coffee grounds can form a dense layer on the soil surface, blocking water absorption and drying out the soil.

Slower germination and growth: Earlier studies linked higher caffeine levels to reduced seed germination and slower plant growth.
